“Southern Sky” – French Pale Ale
This French Pale Ale was inspired by the song "Mississippi Halfstep Uptown Toodeloo" by the Grateful Dead. "...half a cup of rock and rye farewell to you old Southern Sky, I'm on my way." It's about launching yourself into a new adventure while being mindful and joyful of the path taken. This inspired us to create a beer that embodies two of our favorite styles. Awesome Ale, our flagship, is that certain marriage of French Biere de Garde and Bohemian Pilsner. The French Biere de Garde, complete with it's playful light effervescence and slightly grassy characteristics, is paired with the spicy noble hop notes and crisp characteristics of a Bohemian Pilsner.
“Southern Sky” starts with the malt bill of a French Biere de Garde ("beer for keeping") which traditionally is a strong pale ale. The Biere de Garde is traditionally brewed in the Nord-Pas-de-Calais region of France. These beers were originally brewed in farmhouses during the winter and spring, to avoid unpredictable problems with the yeast during the summertime. Typically, beers of this tradition are of a copper colour or golden colour, and as the name suggests the origins of this style lies in the tradition that it was matured/cellared for a period of time once bottled (and most sealed with a cork), to be consumed later in the year, akin to a Belgian Saison. Most varieties are top-fermented and unfiltered, although bottom-fermented and/or filtered versions exist. Particularly authentic products, using only regional ingredients, are entitled to use the Appellation d'origine contrôlée, "Pas de Calais/Region du Nord".
Awesome Ale continues with the hop profile of a Bohemian Pilsner which were first brewed in 1842. Bohemian Pilsner's are known for their complex, spicy, floral Saaz hop bouquet. They are very pale gold to deep burnished gold, brilliant to very clear, with a dense, long-lasting, creamy white head. Usually you'll find the Bohemim Pilsner's are crisp, complex and well-rounded yet refreshing.
What you'll find with our flagship Awesome Ale, is an effervescent and nicely bodied beer with slightly grassy notes and moderate hopping from additions of Saaz, Santiam, and Sterling hops. The flavor carries and transforms throughout the mouth with a very dry finish. It's a very drinkable and refreshing beer, but with complexities that surprise at first taste and keep it interesting as the refreshing and easy drinking qualities take over.ABV%5.8 IBU 38
